Fresh from the Farmers Market: Pasta Pomodoro

This is a super easy recipe I make all summer utilizing just what I find at the Stapleton Farmer's Market.  Enjoy - Kama

4 - 6 Tomatoes
1 Bunch Basil
1 - 2 Garlic Cloves Minced
Pasta (prefer thicker like Pappardelle)
1 - 2 Tbs Olive Oil

Heat water to boil for pasta.  Dice tomatoes and chiffonade (cut in long strips) basil.  Heat large skillet, add olive oil and garlic saute for a few minutes.  Then add in tomatoes and basil.  Cook over medium heat for 10 minutes stirring occasionally.  Place pasta and cook according to instructions while tomatoes cook.  One pasta is done, rinse with cool water and toss with pasta.  You can add shrimp or chicken but this is amazing and healthy just on its own.
