Blue Horseshoe Farmer's Market Sliders

We asked Blue Horseshoe for their recipe for Ranch Hand Sliders...using their grass fed and finished beef, of course.


Ingredients:
4 T extra-virgin olive oil
3 T finely chopped rosemary leaves
2 Lb. Blue Horseshoe ground beef
3 T Worcestershire sauce
1/3 cup chopped green onion
24 mini rolls, We like King’s Hawaiian Sweet rolls
2 cups baby arugula
3 roma tomatoes, cut into thin slices 8/tomato
2 med red onion, quartered and sliced 1/4-inch thick
Pepper to taste

Directions:
Heat the oven to 375 degrees F.

Caramelize the sliced red onion with 2 Tbs. oil in heavy skillet. When done, coat a 9 by 12-inch rimmed baking sheet with 1 tablespoon olive oil. Spread caramelized onion to cover the sheet. Season meat in mixing bowl with Worcestershire sauce, add rosemary leaves and Green onion and Pepper to taste, mix well. Spread meat into pan in 1/2-inch layer all the way to corners of pan. Coat the top of meat with 1 tablespoon olive oil and bake at 375 degrees F for 12 minutes until firm but a little pink at center. Rest meat 5 minutes then cut into 24 square mini burgers. A pizza cutter works great!
Place burgers on the bottoms of the rolls with onion from pan and top with arugula, tomato, and your favorite condiments and set on platter.  Serve with Ranch fries or your favorite potato side.  Enjoy!
